The Agency's role is to assess food-related health risks and safety issues through its research in the areas of food consumption behaviour, biological risks, food hygiene and storage, food additives and flavourings, residues in food and water and food and food-related allergies.
The diagnostic facilities available to Anses

Laboratories
Two laboratories are particularly involved in research into food for human consumption:
· The remit of the Maisons-Alfort Laboratory for Food Safety is to examine food-related physical-chemical and microbiological hazards
· The Nancy Laboratory for Hydrology is involved in inspecting the quality of mineral water and collaborates with government bodies in the water sector.

Human food: the Agency's missions
Improved knowledge of nutritional data

The Agency's remit is to assess and educate, to which end:
· It handles the collection and evaluation of data already available about foodstuffs (CIQUAL [French Data Centre on Food Quality] nutritional database, reports on nutritional requirements, etc.) and it participates in France's National Nutrition and Health Programme. It approves guides on the subject (nutrition and food risk)
· It conducts research (Individual and national enquiry on food consumption -INCA) and participates, through its expert opinion, in health protection and in the implementation of regulations concerning the risk of illness related to food behaviour
· It produces a large number of opinions on food product ingredients and allegations.
Improved control of biological, physical and chemical risk in the food chain

Afssa also has a health protection role:
· It researches the potential risks of food contamination by products that may be harmful to humans (household disinfectants, insecticides, additives, flavourings, residues, etc.)
· It ensures the quality of drinking water by participating in the drawing up of health regulations
· It studies the possible impact of biotechnologies on man (e.g. GMO)
· It approves guides to best practice
