The contact between food and its container may cause the formation of new substances which were previously present neither in the food nor in the container. Likewise, the manufacturing processes (heat for example) undergone by the food may cause the formation of new molecules. These substances are called neoformed products.

Afssa is in charge of assessing the risks relating to these substances. Given the variety of mechanisms used and molecules formed, this assessment requires additional skills to be called upon. This work is therefore carried out on a cross-disciplinary basis by the different committees of experts from the physico-chemical risk assessment unit.
