Contaminants are natural or chemical molecules that are found in foods. They can come from pesticides used in farming or from various sources of pollution. Contaminants of natural origin also exist such as toxins produced by bacteria or viruses and mould.

Anses is responsible for assessing the maximum quantities of residues that are not a risk to health.
